Cold Coffee with Twist

Cold Coffee with Twist 


 

Let's serve chilled coffee with ice cream, cold drink, chocolate sauce & chocolate vermicelli...... at home in restaurant style.

Preparation Time : 15 Min

Cooking Time : 0 Min

Ingredients :
Ingredients
  •  Milk 2 cups
  • Vanilla Ice cream 2 scoops
  • Soft drink or soda 2 cup
  • Sugar 2 tablespoon
  • Instant coffee 1 tablespoon
  • Ice cubes 8 to 10
For Presentation :
  • Chocolate sauce  as required
  • Chocolate vermicelli 2 teaspoon 
Procedure :

    Take the glasses and coat them with chocolate sauce and keep them in freezer for 10 min.
  • Now in a blender blend milk, sugar, instant coffee & ice cubes nicely.
  • Take the glasses out from freezer pour it half with the cold coffee mixture now add a scoop of vanilla ice cream to it then soft drink or soda water 
  • Serve it with a topping of chocolate vermicelli.
Cold coffee with ice cream and soda it ready.......



Tip : If you want it more chocolaty you can use chocolate flavor ice cream in place of vanilla or if you are not having chocolate vermicelli at home you can use choco chip or grate any chocolate available in market.

Veg Patty Burger

Veg Patty Burger

Here comes a burger which is junk free, full of nutrition for your kids and mouth watering for adults even.

Preparation Time : 20 Min

Cooking Time : 15 Min

Ingredients : 
Ingredients
  • Burger buns 2
  • Boiled  & grated potatoes 2
  • French beans 1/2 cup finely chopped
  • Onion 1 medium size choppes
  • Sweet corn 1/2 cup
  • Carrot 1 finely chopped
  • Green, Red & Yellow capsicum 1/2 cup chopped
  • Green peas boiled 1/2 cup
  • Green chilly 2 chopped
  • Coriander leaves few chopped
  • Brown bread crumbs 1 cup
  • Cornflour 2 Tablespoon
  • Salt to taste
  • Red chilly powder to taste
  • Oil for shallow frying   
For Presentation :
  • Tomato slices few
  • Caramelized onion rings 1/2 cup
  • Green capsicum rings few
  • Processed cheese slice
  • Tomato sauce 2 tablespoon
  • Mayonnaise 2 tablespoon
  • lettuce leaves 3-4  
  • black olive 2
  • Tooth pick 2

Procedure :


For Vegetable Patty
  • Mix boiled & grated potatoes, french beans, onion, sweet corn, carrot, (green, red & yellow) capsicum, green chilly, coriander leaves, salt, red chilly powder and 2 tablespoon bread crumbs.
  • Make a smooth dough oh this mixture
  • Now make a round  shape patty from this mixture.
  • Make a cornflour mixture with 1/2 cup water dip your vegetable patty in this cornflour mixture.
  • Now transfer these vegetable patty to bread crumbs, roll it nicely.
  • Take a frying pan just add 1 tablespoon of oil, place your vegetable patty in it, shallow fry it from both the sides.
  • As it has nice brown color on both sides


For Burger :
  • Take burger bun cut it into two from middle
  • Apply butter on both side and toast it on tava .
  • Now mix Mayonnaise and tomato sauce together and apply it on bun lower part.
  • Keep the lettuce leaf on it then veg patty.
  • On veg patty keep tomato slice, capsicum slice and Caramelized onion rings on it.
  • At last cheese slice.
  • Now cover it with the upper part of bun. take a olive with tooth pick fix it on burger.
  • Serve it with salad & fries.

Crispy vegetable fingers can be served for any time hunger as it is loaded with lots of vegetables and we have shallow fried it instead of deep frying. If you want to make it more crispy you can deep fry also.

Ingredients :

Bread Pizza

Bread Pizza

Bread Pizza is healthy option for our pizza lover kids. We can serve them for tiffin or evening snacks. Even it can be served during breakfast also.


Preparation Time : 10 Min

Cooking Time : 10 Min


Ingredients : 
  • Brown bread slices
  • Semolina / Sooji 1 cup
  • Curd 1 Cup
  • Onion chopped 1 cup
  • Capsicum chopped 1 cup
  • Green chilly chopped 2
  • Coriander leaves chopped few
  • Salt to taste
  • Red chilly powder to taste
  • Water as required 
  • Oil for cooking 


Procedure : 
  • Mix Semolina / sooji, curd, onion, capsicum, green chilly, coriander, salt, red chilly and little water to make a smooth paste. Keep this paste aside for 10 min.
  • Now take a brown bread slice and cover one side of bread with layer of sooji mixture.
  • Season your tava or pan with oil. Keep the bread on tava with mixture side down.
  • Wait for few minutes, now apply very little oil on the other side of bread. turn the bread toast it from both sides.
  • When your bread is having nice color it means it is ready. Serve it hot with Imly chutney, green chutney or sauce of your choice.

 Presentation Tip : For kids you can cut it into round by using cooky cutter. it will look like mini Pizza.

Veggie Cracked wheat or Daliya is a very light food. good for health easy to make. It is a complete meal. I add lots and lots of vegetable to make it more nutritious.

Preparation Time : 15 Min

Cooking Time : 20 Mim

Ingredients :
Ingredients
  • Cracked wheat (Daliya ) 1 cup dry roasted
  • Onion 1 sliced
  • Green Peas 1/2 cup
  • Carrot 1 dised
  • Beans 1/2 cup chopped
  • Cauliflower 1/2 cup chopped
  • Tomato 1 chopped
  • Green chilly 2 chopped
  • Ginger chopped 1 teaspoon
  • Coriander 1 tablespoon chopped
  • Cumin seeds (zeera) 1 tea spoon
  • Lemon juice 1 tea spoon
  • Oil 1 tablespoon
  • Salt to taste
  • Red chilly powder to taste
  • 2 & 1/2 cup of water 

Procedure :
  • Dry roast cracked wheat or daliya for 5 min and keep aside.   
  • Now take a pressure cooker add 1 table spoon cooking oil to it.
  • As the oil is hot put cumin seeds, ginger and onion to it. once the onion turns translucent add Tomato & green chilly to it.
  • Add green peas, carrot, beans, cauliflower, salt & red chilly saute all the vegetable nicely. Now add cracked wheat/ daliya .
  • Once you get a nice aroma of roasted daliya add 2&1/2 cup of water & 1 tea spoon of lemon juice.
  • Close the lid of pressure cooker and wait for 1 whistle.
  • After whistle wait for 5 to 10 min, add coriander leaves and serve it hot with curd or raita of your choice

Mango Delight

Mango Delight



Just by simple innovation we can change normal vanilla Ice cream to a yummy Mango Delight.

Preparation Time : 2 Hours

Presentation Time : 5 to 10 Min

Ingredients

Ingredients :
  • 1 Brick Vanilla Ice cream
  • 2 Mango 
  • Tooty Fruity 2 tablespoon
  • Choco Rolls
  • Cashew nut broken 2 tablespoon
  • Chocolate syrup

Procedure :


  • First take 1 mango pulp and mix it with 6 scoops of vanilla ice cream in a mixer nicely. Keep it in freezer for 2 hours (to set) in an air tight box
  • Cut second mango into small pieces  
  • Once the Mango Ice Cream is set, lets start preparing our mango delight 
  • Take one ice cream cup, put 1 spoon mango pieces and few cashew nuts
  • Add one scoop of vanilla ice cream and one scoop of mango vanilla Ice cream in a cup
  • Now again add lots of mango pieces, cashew nuts & tooty fruity
  • Place choco roll in a cup and pour some chocolate syrup on ice cream and toppings.
  • Your Mango delight is ready to impress your kids.

Cottage Cheese Sandwich

Cottage Cheese Sandwich (Paneer Sandwich )



Very Simple, healthy & tasty Sandwich which can be a good option for breakfast, kids tiffin, evening snacks or can be served to our guests

Ingredients :   
Ingredients
  • Bread (white / brown)
  • Cottage Cheese ( grated 200 gm)
  • Capsicum (1 chopped)
  • Onion (1 chopped)
  • Sweet corn (1/2 Cup)
  • Green Chilly (1 chopped)
  • Jalapenos (few chopped)
  • Dry oregano (1 teaspoon)
  • Salt according to taste
  • To make it spicy add crushed black pepper
  • Butter for brushing

Procedure :
  • Mix cottage cheese, capsicum, onion, sweet corn, green chilly, jalapenos, oregano & salt in a bowl
  • Take a bread slice, brush it with butter on one side. Keep the above mixture on other side, now place the second bread over this
  • Place this sandwich on griller or griller pan or in a sandwich maker
  • Once the sandwich is golden brown from both the side, place it on a platter
  • Serve it with your favorite chutney or sauce.

This can be served at any time. As it is very colorful snack, kids will really enjoy it and as we know that kids don't like vegetable but sweet corn is their favorite so I have mix vegetable with sweet corn to make it healthy for kids....

Preparation Time : 15 Min

Cooking Time : 10 - 20 Min

Ingredients :
Ingredients
  • Boiled Potato 2 nos. medium size
  • Sweet Corn boiled 1 cup
  • Onion chopped 1 no.
  • Red, Green Yellow capsicum chopped 1 cup
  • Coriander chopped
  • Green chilly 2 nos.
  • Salt according to taste
  • Red chilly powder to taste
  • Chat masala 1 teaspoon
  • Oil for frying


Procedure :
  • Take a bowl and mix all the ingredients ( boiled potato, onion, sweet corn, red, green, yellow capsicum, coriander, green and red chilly, salt and chat masala).
  • Make a proper mixture of all the ingredients.
  • Take a bread dip it into water and squeeze it now put a spoon of sweet corn and vegetable filling on it.
  • Now wrap a bread over the filling and make a roll of it.
  • Take oil in a kadai once it is hot, deep fry the bread wrap. Once it is done take it out on a kitchen towel so that the excess oil is removed.
  • Serve your Corn Veggie Bread Wrap with red and green chutney.

Broccoli Almond Salad

Broccoli as we all know is a very healthy food. It is very low in Saturated Fat and Cholesterol. It is also a good source of Protein, Vitamin E & calcium. So we must add such a healthy food to our diet. Now we have a very easy and crunchy Broccoli salad.

Preparation Time : 10 min 

Cooking Time : 10 -15 Min

Ingredients :
Ingredients
  • Broccoli 1 no.
  • Garlic 2 -3 cloves
  • Almonds 8 -10 nos.
  • Olive Oil 1 tablespoon
  • Vinegar 2 teaspoon
  • Honey 1 tablespoon
  • Red chilly flakes 1 teaspoon
  • Soya sauce 1/2 teaspoon 
  • Salt according to taste
Procedure :
  • Take the broccoli florets and cut them into half
  • Take almonds and dry roast them and crushed them and keep them aside
  • Now boil 2 to 3 cups water and add broccoli and salt to it. Once the broccoli is blanched put it into ice cold water so that the broccoli color and crunch remains
  • Now transfer Broccoli florets to kitchen towel so that excess water gets removed
  • For dressing take a bowl, add crushed garlic clove, salt, vinegar, olive oil, soya sauce & honey to it and mix it well
  • Take a big bowl add broccoli, dressing and Almonds and toss all together
  • Broccoli Almond Salad is ready


Presentation Tip : Serve immediately with garlic bread.
