Rose Yogurt (Gulab Shrikhand)
Since last couple of months I found myself unable to devote enough time to my blog. Daughter's board exams are on and I was wondering how can I support her with her food intake that can reduce her stress and also help her in coping with setting in summer.
Shrikhand is a kind of yogurt very popular in Maharashtra and Gujarat. This is an essential part of their thali. They traditionally make it with kesar or ilaichi. Then the idea stuck me that I can combine benefits of yogurt and roses and make a dish which she can relish and it will also help her in preparations. Roses have therapeutic benefits that relax body, reduce stress and promote glowing skin. I hope you will find this easy and exotic
Shrikhand is basically made from hung curd you can give it different variations with fruits or dry fruits. Kids loves it with mango or strawberries.

Ingredients :
- Curd 500gm (full Cream)
- Rose syrup 1/2 tablespoon
- Powdered Sugar 1 tablespoon (or according to your taste)
- Fresh rose petals 15 - 20
- Dry rose petals 1 Teaspoon (optional)
- Chopped pistachio nut 1 tablespoon
Procedure :
- Keep a strainer on a deep bowl. Place a muslin cloth on it, as shown in picture.
- Pour the fresh curd in this.
- Bring all the edges of muslin cloth together and tie a knot
- Gently press muslin cloth as shown in picture. You will see extra water (whey) dripping and keep it aside for two hours in refrigerator. Ensure to place a heavy object on this for getting more water dripped out.
- After two hours, when you open muslin cloth, your hung curd / chakka is ready. Transfer it in a bowl
- In a tablespoon of water, dissolve dry rose petals and keep aside for some time
- Chop rose petals and pistachio nut and keep aside
- Now take the hung curd bowl, add powdered sugar, chopped rose petals, dry rose petals and rose syrup.
- Mix all this together with a whisk or blender. Till you get a smooth and creamy paste
- Take serving glass add some chopped rose petals and pistachio as shown in picture
- Now transfer rose shrikhand in a serving bowl or glass and garnish with pistachio
- Keep it in refrigerator and serve chilled
Tips : You can add sugar according to your taste. In case you want to avoid sugar add honey to this.
