Karonda Fry (Carandas Fry)

Karonda Fry (Carandas Fry)

My recent visit to vegetable market exposed me to Karondas and I instantly got nostalgic of my childhood days when we used to grow this plant in our kitchen garden. I was always mesmerised by the colors of this fruit and its flowers. Now when I explored more about this, I realised its medicinal values in curing anemia, bad digestion, stomach pain, constipation etc. Here is a simple preparation for making Karonda which my mom used to prepare.

Preparation Time : 10 Min

Cooking Time : 7 - 8 Min

Ingredients :

  • 250 gm Karonda
  • 8 -10 Small onions
  • 5 - 6 Green chillies
  • Few curry leaves
  • Pinch of Hing (Asafoetida)
  • 1 Teaspoon mustard seeds
  • 1/2 teaspoon haldi powder (turmeric)
  • Salt according to taste
  • Red Chilly powder
  • 1 Tablespoon Mustard oil
Procedure :
  • Wash and clean Karonda. Now cut it into two halves and remove the seeds as shown in picture

  • Chop the onion into four parts and keep aside
  • In a pan take a tablespoon of mustard oil and heat it. Once it is nicely heated and smoky, add mustard seeds and a pinch of hing along with curry leaves

  • Now add Chopped onions to this and saute it for 2 minutes

  • Add chopped green chillies and saute it for a minute or two and then add haldi powder, red chilly powder and salt

  • Now add Karondas to this, mix it well and cook for 4 to 5 minutes
