Grilled Baby Potato with Vegetables

We all enjoy grilled food at restaurants so let's make a simple but restaurant style dish in a simple way at home. Baby potatoes and vegetables grilled on pan with a flavour of herbs and garlic.....



Preparation Time : 15 min

Resting Time : 45 min

Cooking Time : 10 min

Ingredients :


  • 1 Cup blanched baby potato
  • 1 Cup diced vegetables  (onion, capsicum, Bell pepper, tomato without seed )


For Marination :

  • 1 Tablespoon olive oil
  • 1 Tablespoon garlic paste
  • 1 Teaspoon green chilly paste
  • 1 Teaspoon soya sauce
  • 1 Teaspoon mixed herbs
  • 1 Teaspoon tomato chilly sauce
  • 1 Tablespoon cornflour
  • Crushed black pepper according to taste
  • Salt according to taste
For Garnishing :
  • Salad 
  • Lettuce leaf
  • Green chutney
Procedure :
  • Take baby potato clean it nicely and blanch it so that it is 80% cooked with skin
  • Cut vegetables (onions, tomato, capsicum, bell pepper or any other vegetables of your choice)
  • In a bowl prepare marination by adding olive oil, garlic and chilly paste, crushed pepper , mixed herbs, soya sauce, tomato sauce and corn flour mix all well


  • Now add baby potato and vegetables to the merination mix and keep this aside for 40 min


  • Now take wooden sticks and arrange baby potato and vegetables 

  • In a grilled pan add a tablespoon of olive oil and grill baby potatoes and vegetables on it for 7 to 8 min. In between turn the sticks so that it is cooked from all sides nicely


  • Grilled baby potato and vegetables are cooked serve it with salad of your chice as I used plum salsa and green chutney .......

Kheer

Kheer (Kheer, Payasam, Rice Pudding) .......


Rice simmered in milk with dry fruits and sugar. Kheer is a traditional dessert and is served during all festivals, puja, served for guests at home, special occasions and many more.... I thing we Indians if we are preparing something in dessert first option which comes to mind is kheer.... I loved kheer so much, whenever my Mom used to prepare this, I go crazy .... same with my daughter....

Preparation Time : 20 min

Cooking Time : 40 to 50 min

Ingredients :

  • Rice 1/2 cup or 4 tablespoon
  • Milk 1 ltr full cream
  • Sugar 1/2 cup
  • Chopped almonds without skin 2 tablespoon
  • Chopped cashew nuts 2 table spoon
  • Chopped pistachio nut 2 tablespoon
  • Raisin 2 tablespoon
  • Saffron 12 to 15 strands dissolved in warm milk
  • Green cardamom powder 1/2 teaspoon
Procedure 
  • Wash and soak rice for half an hour in warm water
  • Blanch almond nuts in hot water, cool, remove skin and slice it
  • In a pan boil milk. Add rice in boiling milk. On low flame cook rice and milk.

  • Once the rice is 90% cooked add cardamom powder, saffron,  almonds, pistachio, cashew nuts, and raisins 


  • Cook it for five minutes now add sugar.

  • Once it is done pour it into a bowl and keep in refrigerator for 2 to 3 hours

  • Kheer is ready; serve it chilled and garnish it with dry fruits and rose petals.

Tips : you can change the quantity of sugar according to your taste...

Whenever in winters I visit sector 17 market in Chandigarh it is very difficult to resist myself from having a Sweet  Potato Chaat.  Roasted sweet potato with green and red chutney plus lemon squeezed over it, makes it an ultimate dish.....

Preparation Time : 10 min

Cooking Time:  7 min

Ingredients:

  • 3 - 4 Boiled sweet potato
  • 2 Tablespoon green chutney
  • 2 Tablespoon imly ki chutney
  • 1 Lemon
  • Black salt according to taste
  • Chaat masala according to taste
Procedure 
  • First take boiled sweet potato and to give it a roasted effect just roast it on gas stove for 5 to 7 min or till it is cooked from all sides and has a nice smell

  • Now peel the skin off form sweet potato  and cut it into pieces 

  • In a serving plate arrange the sweet potato pieces and add green chutney
  • Add imly kids chutney according to your taste now squeeze lemon on it

  • Sprinkle black salt and chat masala to this

  • Sweet potato Chaat is ready, enjoy street style chaat at your home......

Crispy Tortilla with Assorted veggies


Whenever we plan party at home the first thing is to plan about starters. This one is a perfect party starter. Crispy Tortilla filled with lots of vegetables like corns, bell pepper, onions, tomatoes, paneer.... Softness of cheese with flavour of schezwan sauce, olives and jalapeño ....  What else is required for a perfect party.....

Preparation Time : 20 Min

Cooking Time : 10 Min

Ingredients :


For assorted veggies in schezwan sauce

  • Chopped garlic 1 tablespoon
  • 1 Tablespoon olive oil
  • 2 Tablespoon chopped spring onion
  • 2 Tablespoon diced capsicum
  • 2 Tablespoon diced bell peppers
  • 2 Tablespoon diced paneer
  • 1/2 Cup sweet corns
  • 6 Baby corns sliced
  • 2 Tablespoon chopped tomatoes ( remove seeds)
  • 2 Tablespoon chopped spring onions green
  • 1 Tablespoon Schezwan sauce
  • 1 Teaspoon oregano seasoning
  • 1 Teaspoon chilly flakes
For Crispy Tortilla 

  • 4 Tortilla sheets
  • 1 Tablespoon butter
  • 1 Tablespoon schezwan sauce
  • 1 Bowl assorted veggies in schezwan sauce
  • 2 Tablespoon crushed pizza cheese ( you can add even more according to your taste)
  • 1 Tablespoon chopped olives
  • 1 Tablespoon chopped jalapeño 
  • 1 Tablespoon Green chutney ( optional)
  • 1 Tablespoon mustard sauce ( optional)
  • Oregano seasoning for sprinkling 
For Garnishing 
  • Salad of your choice
  • Salad leaves
Procedure : 

For assorted veggies in schezwan sauce
  • In a pan add olive oil heat it then add chopped garlic, sauté it and add chopped onions, cook it for a minute

  • Now add chopped capsicum, bell peppers, baby corns, corns and paneer, toss it

  • Subsequently add schezwan sauce to it and oregano seasoning and toss it also nicely

  • Now add spring onion greens and remove the pan from flame; transfer the veggies in a bowl and drain out the extra water. Assorted veggies are ready

Prepare and assembly of Crispy Tortilla 
  • In a pan add butter and toast tortilla sheet on it. Now spread 1/2 tablespoon of schezwan sauce on it 

  • Spread assorted veggies on it; then add chopped olives, jalapeño and pizza cheese to it
  • Sprinkle oregano seasoning to it, litte bit of green chutney or mustard. Sauce. Cover it with second tortilla sheet

  • Apply butter on tortilla sheet and very carefully turn it so that the tortilla sheet is toasted on both side
  • Once you get nice brown color from both side remove it from flame and transfer it on flat surface and cut it into 6 slices like pizza

  • Crispy tortilla is ready serve it with salad & chutney .......

Sabudana Vada (Sago Cutlet)







Sabudana Vada is an all time favorite snack . It is consist of sago, potato, crunchy peanuts, spicy green chilly and curry leaves....

Preparation Time : 20 Min

Cooking Time : 20 Min

Ingredients :

  • Sago 2 cups (soak in enough water for 3 to 4 hours)
  • Boiled potatoes 4 medium size
  • Roasted and crushed peanuts 1 cup
  • Curry Leaves or Coriander leaves chopped 2 tablespoon
  • Singhada ka atta 1tablespoon its optional ( water-chestnut flour)
  • Sendha salt or normal salt according to taste
  • Oil for frying
Procedure :
  • First of all soak the sago in enough water for 3 to 4 hours and drain out the excess water.
  • Now boil , peel and mash the potatoes
  • In a blow mix mashed potatoes, chopped curry leaves or coriander leaves, roasted and crushed peanuts, salt, green chillies and singhade ka atta. mix all ingredients nicely

  • Divide the dough in small portions and give a vada or cutlet kind of shape

  • Heat oil in a pan for frying and deep fry vada in hot oil till golden brown

  • Sabudana Vada is ready serve it with curd or chutney with a cup of tea ......

Avocado Sandwich

Avocado Sandwich : Sandwich is all time favourite. This one is with a twist of Avocado which is itself a very healthy ingredient.  Avocado Sandwich is very healthy, very filling and very tasty......


Preparation  Time:  10 min

Cooking Time :  2 to 3 min

Ingredients :

  • 4 Slices brown bread
  • 2 Tablespoon Avocado dip (for recipe click)
  • Small portion of Iceberg lettuce 
  • 6 Tomato slices 
  • 6 capsicum  slices
  • 6 Cottage cheese slices 
  • 1/2 Avocado cut into long strips 
  • 6 Cucumber slices 
  • Crushed black pepper according to taste 
  • Salt according to taste
Procedure : 
  • First of all finish all the vegetable cuttings

  • Now take bread slices toast it in a toster or pan
  • Now assemble the sandwich
  • On a flat surface place the 2 bread slices.  On one bread apply Avocado dip and on second bread place iceberg lettuce 

  • On Avocado dip assemble tomato slices,  cucumber slices and cottage cheese 

  • On the other bread slice, arrange capsicum and Avocado strips.  Sprinkle black pepper and salt on the sandwich.  Now close the sandwich by keeping both the bread slice over each other

  • Sandwich  is ready cut it diagonally and serve it with salad.......
