No Bake Cookies

Christmas festivities are in....new year celebration mood is already set in....everywhere chocolates are cakes are visible. I was sitting idle and thinking. Thinking about cooking. Is it all about set of rules and recipes that have to be followed to get the outcome you desire.

I took a pause and looked around what all ingredients I am having. I found nuts, cornflakes, dark chocolate, peanut butter etc. and i thought of doing an experiment. I started rehearsing in my mind what i want. The process I adopted was a bit unusual but the end result delighted me. I was able to create a very nutty crunchy chocolate cookies full of nutrients and suitable to the occasions around that to with in 6-7 minutes!!

My thoughts became firm, cooking is not only following rules and laws. It is more about how much your love to experiment and give shape to your creativity.




For 12 to 16 cookies

Preparation Time : 5 to 7 Min

Cooking time :  4 to 5 Min

Ingredients :  



  • Cooking chocolate dark 100 gm
  • Cornflakes 1 Cup (I used brownie flavour of Kellogg's)
  • Muesli 1/2 cup (I used Kellogg's Muesli nuts delight
  • Peanut Butter 2 tablespoon
  • Honey 1 Tablespoon (optional)
  • Parchment paper as required 

Procedure  :  
  • In a double boiler melt chocolate compound nicely 


  • Once the chocolate comes to a smooth texture, add honey to this and mix it

  • Now add Peanut butter to this


  • Mix it, add cornflakes and nuts muesli





  • On a parchment paper place a small portion of this mixture

  • Repeat the steps with the rest of mixture

  • Now keep this in refrigerator for 30 to 40 minutes 

  • Transfer this into an airtight box 

  • Enjoy with tea coffee or milk 


Tip : You can give variation to this according to your taste by adding nuts of your choice

Bread Cheese Canape

Bread Cheese Canapé  

Winters are in. Time to enjoy winter veggies. My favourite one is green Chana. I prefer to add these Chana in various vegetables that i cook. Recently I prepared another variant of evening snacks using these Chana and paneer. I prepared paneer bhurji which is quite popular in our homes. For variation to that I added green chana and put crushed black pepper.

This gave it a different taste and crunchiness of chana made it more delicious. Once this stuff is ready I placed it on top of brown bread canapes, to make them more tempting for kids to pick one and gulp down. It is  nutritious and a change from routine evening snacks. Great option which is filling, healthy and innovative.

Preparation Time :  20 Min

Cooking Time : 15 Min

Ingredients :



  • Cottage Cheese (paneer ) 200 gm
  • Onion 1 medium size sliced
  • Potato 1  medium size disced 
  • Green chana 1/2 cup
  • Green chilly chopped 2
  • Cumin seeds 1/2 teaspoon
  • Black pepper crushed 1 tea spoon
  • Sant according to taste
  • Oil 2 tablespoon for cooking
  • Coriander chopped 1 Tablespoon
  • Brown bread slice 4
Procedure :  
  • Slice onion keep aside, chop potato keep a side



  • In a pan take oil 1 1/2 tablespoon heat it add cumin seeds

  • Now add sliced onion to this cook it for a minute or two
  • Now add potato to this and on low flame cook this for 5 minute or till the potato is cooked

  • Add salt, chopped green chill along with crushed pepper



  • Mix it add green chana and cook is fro 3 minutes

  • Crumble cottage cheese and add to the mixture

  • Now increase the flame to high and cook the whole mixture for two to three minute. Make sure that all water is evaporated but paneer should not be over cooked

  • Add chopped coriander to this


For Canapés   
  • Take brown bread cut, it into square or rounds what ever shape you like
  • Toast it on hot tava from both the side by applying little oil.

  • Now place small portion of paneer and chana bhurji as shown in picture

  • Repeat the steps with rest of the canapes 

  • Serve it with a glass of milk or juice 
  • Or you can serve this bhurji with lacha parantha and butter milk .. the way you like 



Tip :   
  • If you wish you can apply green chutney to bread canapé to make it more spicy
  • You can give it more colours by adding bell pepper to your bhurji
  • You can use this as a sandwich filling
  • Variations are unlimited ...

Samosa Air fried

Samosa (Air Fried)   

Who doesn't know Samosa. This is the one dish extremely popular through out the length and breadth of our country. This is served on all occasions. Guests visiting home - bring samosa to serve. Kids passed with good scores, time to celebrate - let's enjoy samosas. So one dish that is a hit since our  childhood and available with massive variants ranging from potato to paneer, onion to noodles etc is samosa.

When I was thinking of putting this dish in my blog, I tried to study its  history and I was amused to find that this is a dish brought to our country from Middle East by the traders of 13th / 14th century. There it was usually filled with meat and mutton. Amazed also to know that Ameer Khusro was a big fan of samosas. In India it was given a different more vegetarian look by filling patotoes, peas, paneer, onions etc.

Now a days in NCR you will find samosa chaat very frequently. Here Samosas are crushed and tossed with onion, coriander green chutney, curd, choley and served to delight your taste buds. So now I was desperate to make this for my family and of course my challenge was to give it a twist by making it healthy and tasty. I recently bought an air frier and thought of making it without deep frying it. However family was too reluctant to have samosas that too not deep fried. So I made both versions and presented them with option.

Believe me very soon whole house was much more fascinated with air fried one. Taste was excellent. Its colour was perfect golden and crisp. To make its filling rich, I added cashew nuts and raisin.  So time to surprise and delight your  family with the hygiene of your  kitchen.










Preparation Time :  30 Min

Cooking Time :  20 Min

For 12 to 15 Samosa

Ingredients :   

For Dough :  
  • All purpose flour 1 Cup
  • Ghee/ oil  1/3 Cup
  • Carom seeds (ajwain) 1/2 teaspoon
  • Salt according to taste



For Stuffing :  

  • Potatoes 2 medium size boiled and cut into cubes
  • Green peas 1/2 cup
  • Onion 1 chopped
  • Cumin Seed 1/2 teaspoon
  • Ginger chopped 1 teaspoon
  • Green chilly chopped 2
  • Cashew-nut 10 to 12
  • Raisins 12 to 15 
  • Turmeric powder (Haldi) 1/2 teaspoon
  • Dry mango powder 1/2 teaspoon
  • Salt according to taste
  • Red chilly powder according to taste
  • Coriander leaves chopped 1 tablespoon
  • Oil 1 tablespoon 
Oil for frying

Procedure :   

For Dough :   
  • In a bowl take Flour, salt and oil. Mix it well, you will get a bread crumb texture


  • Add little water and make a hard dough. keep it aside for 10 to 15 minutes


For Stuffing :  
  • In a pan heat oil, add cumin seeds. Now add ginger, onion and green chillies cook it for 2 minutes

  • Now add cashew nut, green pea, turmeric powder, salt and red chilly powder cook it for 3 to 4 minutes




  • Now add raisins add diced potato. mix well and cook till potato is done


  • Add dry mango powder and coriander leaves mix well and keep it aside


  • Dough and stuffing is ready

  • Divide the dough into 7 small balls of equal portion. Roll this ball into a flat disk as shown in picture



  • Cut it into a half, take one half give it a cone shape as shown in picture


  • Stuff it with stuffing close the edges 





  • Repeat the steps with rest of the samosas

  • If you love fried food, deep fry these samosas in medium hot oil till it is crisp and cooked




  • As I try to give some healthier version to my family I air fried these samosas
  • Preheat air fryer for 5 minutes
  • Now place the samosa in arifryer brush it with little bit oil. keep it for 6 to 7 minute at 180 degree
  • Open it and change the side of samosa  and air fryer it for 5 minute 
  • You will see the colour is change and samosa is cooked properly
  • To give it more crisp look and colour brush it one more time with oil and cook it for 2 minutes 





  • It was as good as the fried one 
  • Serve hot with a cup of tea or coffee
