Kheer (Kheer, Payasam, Rice Pudding) .......
Rice simmered in milk with dry fruits and sugar. Kheer is a traditional dessert and is served during all festivals, puja, served for guests at home, special occasions and many more.... I thing we Indians if we are preparing something in dessert first option which comes to mind is kheer.... I loved kheer so much, whenever my Mom used to prepare this, I go crazy .... same with my daughter....

Ingredients :
- Rice 1/2 cup or 4 tablespoon
- Milk 1 ltr full cream
- Sugar 1/2 cup
- Chopped almonds without skin 2 tablespoon
- Chopped cashew nuts 2 table spoon
- Chopped pistachio nut 2 tablespoon
- Raisin 2 tablespoon
- Saffron 12 to 15 strands dissolved in warm milk
- Green cardamom powder 1/2 teaspoon
Procedure
- Wash and soak rice for half an hour in warm water
- Blanch almond nuts in hot water, cool, remove skin and slice it
- In a pan boil milk. Add rice in boiling milk. On low flame cook rice and milk.
- Once the rice is 90% cooked add cardamom powder, saffron, almonds, pistachio, cashew nuts, and raisins
- Cook it for five minutes now add sugar.
- Once it is done pour it into a bowl and keep in refrigerator for 2 to 3 hours
- Kheer is ready; serve it chilled and garnish it with dry fruits and rose petals.
Tips : you can change the quantity of sugar according to your taste...
