Beetroot Vegetable Soup

 Serve your kids with this nutrients rich soup in winters made up of beetroot, spinach, beans, tomatoes etc. Beetroot boosts stamina, gives fibers, helps in detoxification, spinach low in calories and fat. It gives iron and vitamin K. Carrot helps in improving vision and tomato gives vitamin C. This is excellent source of nutrients for kids and adults. I serve this at least 3 times in a week to help them fight winters.




Preparation Time : 15 Min

Cooking Time : 20 Min

Serves : 2

Ingredients :


  • 1 Beetroot chopped
  • Handful of spinach
  • 2 Medium size chopped tomatoes
  • 1 Medium size chopped onion
  • 1 Chopped carrot
  • 8 -10 Chopped beans
  • 1 Teaspoon chopped ginger
  • 1 Teaspoon chopped garlic
  • 1 Green chilly
  • Few coriander leaves
  • Salt according to taste
  • 2 1/2 Cup of water

Procedure :
  • Clean, wash and chop vegetables and keep aside

  • Now Take a pressure cooker add spinach leaves and all the ingredients along with salt and water





  • Pressure cook all these ingredients on medium flame for 15 -20 minutes and make sure to cook till 4 to 5 whistle 
  • Once it is done close the gas and keep the cooker aside for 10 Minutes
  • Now open the cooker and blend the vegetables nicely with a mathini or you can use hand blender



  • Now strain this mixture using stainer and transfer to a bowl



  • Before serving just boil this soup sprinkle some crushed black pepper and garnish with coriander leaves..... enjoy ..




Tip : 

  • It's your choice you can strain the soup or if you don't want to waste the finer just blend it with blender and use it 
  • You can mix the Left over of soup in wheat flour along with salt, chilly and onion and form a dough. Prepare paratha with this dough it taste yum.

Sweet Munchies

Sweet Munchies

 Winters are approaching. Festivities are round the corner. Time is right when you and your family wanted to munch maximum. Eating too much junk stuff is not healthy. With this Sweet Munchies you can not only give healthy and hygienic stuff to your family, but also will satisfy you that you care for them. So enjoy time with your nears and dears. Add lots of nuts and saffron to give nutritious content as well.





Preparation Time : 15 Min

Cooking Time : 15 Min

Ingredients :



  • 1 1/2 Cup of Maida (all purpose flour)
  • 1 1/2 Tablespoon of rava (sooji)
  • 1 1/2 Tablespoon of desiccated coconut
  • 1 Cup sugar
  • 2 Tablespoon pure ghee
  • Pinch of cardamom powder
  • 1/2 Teaspoon of baking powder
  • Few Saffron strands dissolve in a tablespoon of water
  • Oil for frying
  • 1/2 Cup of water
Procedure :
  • Take 1/2 Cup of water and dissolve sugar in this and keep this sugar syrup aside
  • In a bowl take maida, rava, desiccated coconut, baking powder, cardamom powder, ghee and saffron. Rub this mixture with your palm you will feel that due to ghee the flour is getting a crumb like texture





  • Now add sugar syrup to this and knead the dough nicely as shown in picture





  • On a flat platform roll the dough as shown in the picture



  • With the help of cutter cut the dough in a desired shape. or if cutter is not available you can cut this in a square or diamond shape with the help of knife







  • Take a pan and heat oil for frying
  • Repeat the step with rest of the dough
  • Now fry these sweet munchies on medium flame till these are properly cooked. Make sure that 

  • The oil is not too hot otherwise munchies will be brown from outside but uncooked from inside


  • Fry all the munchies, once done keep it on kitchen towel so that extra oil is removed 



  • Keep it in a air tight container and use it as and when required...



Tips :
  • Desiccated coconut is optional. If you like coconut you can use it otherwise no need
  • To add nutrients for your kids you can add almond powder to this as we added rava and coconut 
  • For frying I used normal cooking oil you can use pure ghee also
  • Sugar quantity you can increase or decrease according to your taste

Palak Puri (Spinach Bread)

 My spouse being in sales is traveling a lot. He is least interested in carrying house cooked stuff as he says it is cumbersome to carry veggies. With this option, now he need not carry veggies and being deep fried it has long shelf life. Further easier to relish in a moving car as well. Superb option for picnic and long drives. I enjoy this during winter season with a cup of tea .....



Preparation Time : 15 Min

Resting Time : 15 Min

Cooking Time : 15 Min

Ingredients :


  • 2 Cups wheat flour
  • 1 Tablespoon rava or sooji
  • Handful of Spinach washed and chopped
  • 2 - 3 Green chillies
  • 5 - 6 medium size garlic cloves
  • Small piece of ginger
  • 1 Tea spoon chilly flakes or according to taste
  • 1/2 Teaspoon ajwain (carom seeds)
  • 2 Tablespoon cooking oil
  • Salt according to taste
  • Water if required for dough
  • Oil for frying
Procedure :
  • Take spinach, green chillies, garlic, ginger, 2 tablespoon of water in a mixer and make a puree


  • Now take a bowl add wheat flour, sooji, salt, chilly flakes,  ajwain, oil and spinach puree and mix well





  • Now knead the dough nicely. make sure the dough is nicely done and if required add some water 

  • Keep dough aside for 10 to 15 Minutes
  • Heat oil in a pan or kadai. Side by side make small balls of the dough and roll them into a flat puri.


  • Deep fry puri in hot oil, repeat the steps with rest of puris 




  • Serve this with tea or coffee ...



Tip : In Case you need Puri to be little bit soft you can avoid using sooji .
