Poha Vada (Flattened Rice Vada)  

Poha is one of the most popular breakfast dish, having a very big consumer base. Whether it is north or west, popularity of poha is pretty high. At least once or twice this is cooked in our homes and we feel delighted to relish it.

Similarly if you are from south, idli or dosa or vada would be your favourite to start your mornings. However real challenge with South Indian breakfast is that you need to ensure your material is ready one night before. So you have to keep the batter ready beforehand itself.

Here I faced a tricky situation when family desired to have Vada with Sambhar and I didn't have the batter. So I thought and came up with an innovative concept to make Vada from Poha i.e. flattened rice (also known as Chura in some places). This is easily digestible and easily available. So try this at home




Preparation Time :  30 Min

Cooking Time : 20 Min

Ingredients :  



  • Poha 1 Cup
  • Curd 1/2 Cup
  • Rice flour 1 Tablespoon
  • Bread slice 2 no.
  • Onion 1 medium size chopped
  • Green chillies 2 Chopped
  • Ginger Chopped 1 Tea spoon
  • Curry leaves 8 to 10
  • Black pepper corn 8 to 10 crushed
  • Pinch of Hing (asafoetida)
  • Salt according to taste
  • Oil for frying
Procedure :  
  • In a bowl take poha wash it and transfer this into strainer. So that poha doesn't absorb too much water and became messy. Keep it a side in a strainer.

  • Finish all cutting and chopping
  • In a bowl take poha add chopped onion, rice flour, curry leaves, green chilly, pinch of hing, crushed pepper corn, ginger






  • Soak bread in water as shown in picture. Remove excess of water. crush it and add with breast of the mixture along with curd and salt



  • Now mix all ingredients nicely you will get a dough like texture


  • Take a small portion of mixture and form flat tikki with whole in middle as shown in picture 
  • Prepare all the vadas and keep aside

  • In a pan heat oil once the oil is hot deep fry vada in this on medium flame. Till it is cook from both the side

  • once it is cook take out from pan and keep it on kitchen towel so that the excess of oil is removed



  • Enjoy this with a sambar, chutney and a cup of tea ..



Tip    
  • If you like you can add few cashew nuts to this it will give some nutty taste
  • If dough is too much sticky add some bread crumbs to this otherwise your vada will be too much oily

Cottage Cheese Bread Pakora

Sunday morning, perfect time to enjoy leisure with little bit of extravagancy on calories. This time I made these Bread Pakoras filled with cottage cheese, mint chutney, Potatoes etc. to delight my lazy spouse and daughter. My secret plan was to fill their tummies for long so that I can shop till late afternoon in the mall...



Preparation time : 20 Min

Cooking Time : 15 Min

Ingredients :


  • 8 Bread slice (I used brown bread)
  • 2 to 3 Boiled potatoes grated
  • 1 Tablespoon chopped onion
  • 2 Green chilly chopped
  • 1 Tablespoon chopped coriander
  • 1 Tea spoon dry mango powder (aamchur)
  • Salt according to taste
  • Red chilly powder according to taste
  • 200 gram Paneer (cut in long slice)
  • 4 Tablespoon green chutney 
  • 1 Cup gram flour (besan) for batter
  • 1/2 Teaspoon ajwain 
  • Oil for frying

Procedure :

For Batter :
  • In a bowl take besan, add salt, chilly powder, ajwain and add some water to this to form a free flowing mixture as shown in picture






For Bread Pakora :
  • In another bowl take grated boiled potatoes add chopped onion, green chilly, coriander, salt, red chilly powder,  dry mango powder and mix all well








  • Now take a bread slice, apply green chutney on it as shown in picture, spread some potato mixture on this and place a thin and long slice of paneer



  • Now take another bread slice apply green chutney on it and place this bread slice on the previous one as shown in picture and press it so that both the bread slices stick to each other and the filling do not come outside


  • Repeat these steps with rest of the bread slices and keep them aside
  • Heat oil for deep frying 
  • Take one bread pakora, dip it into batter carefully and leave it into pan for frying







  • Fry bread pakora from both sides on medium flame till it is cooked thoroughly
  • Take out bread pakora on paper napkin so that all excess oil gets removed 


  • Cut bread pakora and serve with a ht cup of tea ....

Onion Kachori (Deep fried Indian onion bread)

Onion Kachori

This is a special Indian delicacy which is deep fried, enjoyed with friends and family usually in breakfast. It is the specialty of places like Indore and Rajasthan. I made it with my twist of onion with peanuts giving it same taste but added crunch.



Preparation Time : 20 Min

Cooking Time : 20 Min

Ingredients :

For Dough :

  • 1 Cup all purpose flour (Maida)
  • 1/2 Teaspoon Carom seeds (ajwain) 
  • Salt according to taste
  • 1/4 Teaspoon of baking soda
  • Ghee/Oil 2 Tablespoon
  • Water as needed


For Filling :

  • 2 Tablespoon dry roasted gram flour (besan)
  • 2 Onion sliced
  • 1 Tablespoon chopped ginger, garlic
  • 2 Chopped green chillies
  • 2 Tablespoon chopped coriander
  • 1 Tablespoon roasted and crushed peanuts (optional)
  • 1 Teaspoon Fennel seeds (saunf)
  • Pinch of asafoetida (hing)
  • 1 Teaspoon garam masala powder
  • 2 bay leaves
  • 1 Teaspoon dry mango powder
  • Salt according to taste
  • Red chilly powder according to taste
  • 1 Tablespoon oil
Oil for frying

Procedure :

For dough : 
  • In a bowl sieve the flour, salt and baking soda together. Add carom seeds and oil to this. Now rub the flour mixture between your palms to get bread crumb texture




  • Knead the soft dough with water. cover it with moist cloth and keep it aside
For Filling :
  • In a pan dry roast besan and keep aside. 
  • Take a pan Heat oil in it add hing, fennel seeds and bay leaves

  • Now add chopped ginger garlic to this, saute this for a minute, add chopped green chillies and sliced onions. Cook onions for 4 to 5 minutes or till it is translucent in colour




  • Now add chilly powder, garam masala powder and salt to this and cook for a minute



  • Now add besan to this and cook on low flame till all the moisture is gone and you can smell nice aroma



  • Once this is cooked add roasted crushed peanuts to this and cook for a minute. peanuts give a crunchy taste to your kachori

  • Now add dry mango powder and chopped coriander leaves, mix it and remove from the flame

  • Let the mixture cool for some time and remove the bay leaves for mixture 

  • Take the flour dough and make 12 to 14 balls. Take a ball flatten it as shown in picture


  • Place a little filling in the centre and bring the edges together to form a ball as shown in picture

  • Now Flatten it slightly as shown in picture



  • Heat oil in kadai. fry kachories on slow flame till it is cooked properly and golden brown from both the sides




  • Repeat the steps for rest of kachories 

  • Your Onion Kachori is ready enjoy this with a chutney and a cup of tea
