Green Beans & Vegetable Salad

Sumner is a time for light and healthy meals & salads. The good thing about salad is we can be as innovative as we want. So lets try a medley of colorful veggies (green beans, red, yellow capsicum, zucchini & ice berg) serve with honey and lemon juice.

Preparation Time : 10 min

Cooking Time : 15 Min

Ingredients
Ingredients :
  • Fresh String beans 20 -25 No
  • 1Yellow Capsicum
  • 1 Red Capsicum
  • 1 Green Zucchini
  • Parsley chopped 1 tablespoon
  • 1 Small Iceberg lettuce
  • 1 Table spoon olive oil
  • 1 Table spoon honey
  • 1 Tea spoon vinegar
  • Salt to taste
  • Red chilly flakes to taste
  • 1 Table spoon lemon juice

Procedure :  
  • Take Fresh & clean vegetables 
  •  Shred Iceberg lettuce and keep it in ice cold water for 10 min
  • Trim the string beans, cut red, yellow capsicum & zucchini julienne  
  • Now take a bowl add beans, capsicum, zucchini, parsley, salt, chilly flakes, olive oil, honey and vinegar
  • Mix all the ingredients nicely 
  • Now take a pan heat it and add a mixture of vegetables, toast it for 4 to 5 min or till the vegetables are cooked
  • For plating take a salad platter place Iceberg lettuce on it now add the toasted vegetable and add lemon juice to it
  • Serve it hot 


Tips : For Salad try to use fresh vegetables. To give a variation to your salad you can use other vegetables also of your taste like carrot, green capsicum or many more......
