Poha Tikki

Poha Tikki (Flattened Rice Tikki)  

Here comes a Sunday. Week long wait is over. Time to delight yourself. Day to pamper yourself. Everyday we are focussed on eating healthy oil free food. But on a Sunday, we can relent a bit and let our taste-buds enjoy little.

So what to prepare today. I thought. Again thought. Sandwiches, paranthas, poories, dosa, idli, poha etc. Tough question to answer. But I want something that can be a brunch. Heavy also filling also and of course give a feeling of Sunday to break free our soul from all guilt.

Hence I tried this experiment. I prepared poha cutlets. In these poha cutlets I added raisins, roasted peanuts, cashew giving all together a different crispy and crunchy texture in mouth. Raisins are giving mild sweet taste with mix of nuts pampering your taste buds will create mild soothing taste and mind will relish the ingenuity.

Preparation Time :  30 Min

Cooking Time :  20 Min

Ingredients :

  • Poha 1 cup (washed in water and soaked)
  • Potato boiled 4 medium size
  • Green peas boiled and crushed 1/2 cup
  • Raisin 1 Tablespoon
  • Peanut roasted and crushed 2 Tablespoon
  • Cashew nuts 6 to 7 crushed 
  • Green chillies 2 chopped
  • Ginger crushed 1 teaspoon
  • Coriander 1 Tablespoon chopped
  • Salt according to taste
  • Oil for frying
Procedure :  
  • Take washed and soaked poha in a bowl.

  • Add boiled and granted potato in this



  • Now add green peas, ginger, raisins, peanuts, cashew nut, green chillies, coriander and salt



  • Mix all together and form a dough

  • Take a small portion of dough and form a small tikki . Repeat the same step with rest of the dough.


  • In a kadahi heat oil. deep fry poha tikki on medium flame

  • Once the tikki is cooked take out on kitchen towel so that the excess oil is removed

  • Serve it with a cup of tea or coffee

Rice Vada

Rice Vada

 Many times we are left with previous night rice unconsumed. Most of the time we use it in making tawa pulao or fried rice.  This time I gave a twist to my unused rice and consume this in preparing Rice vada or Rice pakora. Rice Vada made with leftover rice is tasty, easy option to delight and surprise your family and friends.

Ingredients :



  • 1 Bowl cooked rice
  • 2 Tablespoon besan (gram flour)
  • 1 Tablespoon rice flour
  • 1 Medium size chopped onion
  • 1 Teaspoon grated ginger
  • 2 Green chilly chopped
  • 1/2 Cup curd
  • 2 Tablespoon chopped coriander
  • Salt according to taste
  • Red chilly powder according to taste
  • Few curry leaves
  • Pinch of hing (asafoetida)
  • 1 Tablespoon split gram (channa dal)
  • 1 Tablespoon split black gram skinless (urad dal)
  • 1 Tablespoon oil + oil for frying
Procedure :
  • Finish all cutting and chopping
  • In a bowl add cooked rice, chopped onion, green chilly, besan, rice flour, salt, chilly powder and coriander leaves








  • In a small pan heat 1 tablespoon oil, once oil is heated up add hing, urad dal, channa dal, cook for minute and add curry leaves. Now add this roasted dal in bowl and mix with all other ingredients






  • Mix all ingredients nicely, now add curd to this and mix well




  • Heat oil in a pan or kadai
  • Take a small ball of this mixture in your palm as shown in picture





  • Make a flat tikki of this mixture and fry on medium flame





  • Repeat the same steps with rest of the mixture

  • Rice vada is ready enjoy it with a cup of tea or coffee

Rice Corn Balls

Rice Corn balls 

 Rice corn and cheese blended together,  coated with bread crumbs forms a perfect party starter or evening tea snacks,  whichever way you like to entertain your loved ones...



Preparation Time : 20 Min

Cooking Time : 20 Min

Ingredients :

  • 1 Cup cooked rice
  • 1 Cup cooked and coarsely crushed sweet corns
  • 1 Tablespoon cooked sweet corns
  • 1 Medium size boiled and grated potato
  • 2 Tablespoon grated cottage cheese 
  • 1/2 Cup bread crumbs
  • 2 Chopped green chillies
  • 2 Tablespoon chopped coriander leaves
  • Salt according to taste
  • Crushed black pepper according to taste
  • 1 Teaspoon chat masala
  • Oil for frying
  • 1/2 Cup bread crumbs for coating
Procedure : 
  • Finish all cutting and chopping 
  • In a bowl take cooked rice, add grated potato, cottage cheese, crushed sweet corns, sweet corns and bread crumbs


  • Add other ingredients, green chilly, coriander leaves, salt. Crushed pepper and chat masala


  • Now mix this mixture nicely and form a dough 
  • Divide the mixture in equal portions and form small round balls
  • In a plate, take bread crumbs and roll these balls in bread crumbs nicely
  • In a pan heat oil and deep fry 3 to 4 balls at a time till they are golden brown in color and cooked from all sides

  • Rice Corn Balls are ready to serve hot with red and green chutney.....
