Lately I was not updating my blog and was badly missing action on it. Many times you pass through a phase of life where you have more pressing responsibilities to fulfil. Now a days we are a part of nuclear families and to blog I need support of my family to Shoot when I am blogging,

Same way my daughter who is pursuing her secondary education needs my support. When she is coping up with multiple actions in her daily routine. So as a good mother I am trying to help her out with her demanding routine. This effect my blogging. Anyways I am trying to be back in action with my passion and love.

Again I have an intresting incident to share with you all. Few days back I got an opportunity to be a part of one of the culinary festival organised by "Food Tak" channel and there I was supposed to prepare a recipe of a sweet using "Nutrela"

If you are visiting my blog, you will be knowing that I am not a person with sweet tooth. My recipes are more towards health and light. As we all know sweets are full of calories. However when I got invitation from such a prestigious platform, I took it as a challenge to prepare something sweet but healthy using Nutrela which is rich in protein.

So I thought of preparing laddu using khajoor, Nutrela and dry fruits it came out very good. This recipe I will share soon with you all.

Today I am sharing a very Simple, easy, healthy, sugar free with very few ingredients recipe which we can use during fasting also. Dates Dry Fruit Barfi.






Preparation Time : 30 Min

Cooking Time : 10 Min

Resting time : 10 Min


Ingredients :  



  • Pure Ghee 2 Tablespoon
  • Dates 300 gm (soft one)
  • Almonds chopped 1/2 cup or 50 gm
  • Cashew-nut chopped 1/2 cup or 50 gm
  • Pistachio Nut chopped 2 Tablespoon 0r 25 gm



Procedure :  

  • Take Dates remove seeds and chop them. To get a fine texture you can grind them in a food processor or mixer



  • Take Almonds, Cashew nut and Pistachio chop them and keep a side

  • In a Pan heat ghee on slow flame add chopped almonds and roast them

  • Now add Cashew nuts and pistachio roast all dry fruits on slow flame till you get a nice aroma or for 2 to 3 minutes

  • Once dry fruit is done add chopped dates and cook all ingredients for another 2 minutes.


  • Close the gas allow mixture to cool for few minutes.

  • Once the mixture is little bit cool try to form a dough of mixture as shown in picture


  • I have given it a round shape by creating a log and then cutting log into a round circles. You can have a shape of your choice. 






  • Keep it in a air tight jar and use as desired 


Tips   
  • You can add any other dry fruit of your choice 
  • If you want it more sweet add some honey to this
  • You can add fig also

Nachos Corn and Bean Salad

We have all seen our children eat a packet of nachos as evening snacks and then find them unable to have a healthy dinner. So as a negotiation I present this salad to you. A nutritious and light combination of kidney beans, corn and nachos presents itself to be a win-win situation for both parents and children.

Kidney beans and corns are the essence of this dish. Both have their fair share of its merit, commencing with kidney beans, we find it to be majorly composed of Carbs and fibres but also proves to be a rich source of protein. They compliment one's health due to its following functions: Detoxify the body, help in digestion, increase muscle mass, prevent diabetes, stimulate immune system, promote strong bones, etc.

Corns being the other significant part of the dish does more than being tasty: It contains high fibre content and is a rich source of vitamin A, B, E and other minerals.

All in all the dish is a bowl of nutrition, taste and happiness.




Preparation Time : 10 Min

Cooking Time :  0 Min

Ingredients :


  • Kidney beans 1 cup boiled or canned one
  • Sweet corns 1 cup blanched in hot water
  • Nachos chips 1 bowl
  • Onion finely chopped 1 medium size
  • Red bell pepper Chopped 1 medium size
  • Cucumber chopped 1 medium size
  • Coriander chopped 2 Tablespoon
  • Jalapeno chopped 1/2 tablespoon
  • Lemon juice 1 Tablespoon
  • Olive oil 1 Tablespoon
  • Chilly flakes 1 teaspoon
  • Sea salt according to taste
  • Honey 1/2 tablespoon
  • Tabasco sauce 8 to 10 drops
  • Few mint leaves
Procedure :  
  • For salad. Finish all cutting and chopping 

  • For sallad dressing :
  • In a bowl add olive oil,chilly flakes, lemon juice, honey tabasco sauce and Jalapeno whisk all together



  • In another big bowl add beans, sweet corns, onion, red bell pepper, cucumber, mint,coriander and sea salt. mix all together 




  • Now Add the salad dressing to this. 

  • Toss the salad gently 


  • While serving take a short glass or bowl. Crush few Nacho chips add to the serving glass top this with salad and add few more nacho chips to this.



  • Garnish with mint leaves and serve


Tips :  

You can give variation to this salad according to your taste . It can be served as party snack.

Very recently, I visited one of my neighbour's house Mini Gandhi during the peak afternoon, it was quite hot. She knew I don't take aerated drinks at all. She brought a peach coloured drink for me and informed me it is Bael Ka Sharbat. I had heard about it but never tasted. Quite hesitatingly i tasted it. To my surprise it was nice with a peachy aroma but quite sweet. I felt refreshed after having it and I decided to do some research on it. She, being a member of Holistic Healing Sanstha, had recently heard Luke Coutinho talk about the health benefits of Bael in summers which she shared with me.

Bael, known as, Aegle Marmelos, commonly called stone apple or wood apple is a native tree of India, its fruit has amazing benefits. It can cure heat in stomach, reduces gastric ulcers, cures Diarrhoea. It is anti inflammatory, controls cholesterol and many more.

So I decided to give this Bael sherbet a healthy twist and here it is



Preparation Time : 20 - 25 Min

Cooking Time : 0 Min

Ingredients : 



  • 1 Ripe Bael fruit medium size
  • 3 Tablespoon Shakkar (jaggery)
  • Rock salt 1 Teaspoon or according to taste
  • Roasted zeera powder 1 Teaspoon
  • Mint leaves 10 -15 
  • 2 lemon for garnishing
  • Ice cubes
Procedure : 
  • Break the Apple wood fruit. 

  • Remove the pulp 

  • Add water to the pulp and leave this for 5 minutes

  • Crush the pulp with hands not with blender, else the seeds will get crushed and make the squash bitter in taste.

  • Strain this juice through strainer



  • Add shankar to it, mix it. I used organic shankar to give my squash healthy twist.


  • Add rock salt, jeera powder and mint leaves to this and mix it well. you can keep this squash in bottle or jag.use it according to your need 





  • While serving take a glass add sone small pieces of lemon. fill the glass with ice cubes add few mint leave add ball squash to this . Ratio is 1:3 one portion Bael squash and 2/3 portion of ice or c hilled water
