Crispy Vegetable Fingers
Crispy vegetable fingers can be served for any time hunger as it is loaded with lots of vegetables and we have shallow fried it instead of deep frying. If you want to make it more crispy you can deep fry also.

Ingredients :
- Boiled & grated potatoes 2
Ingredients - French beans 1/2 cup finely chopped
- Onion 1 medium size choppes
- Sweet corn 1/2 cup
- Carrot 1 finely chopped
- Green, Red & Yellow capsicum 1/2 cup chopped
- Green peas boiled 1/2 cup
- Green chilly 2 chopped
- Coriander leaves few chopped
- Brown bread crumbs 1 cup
- Cornflour 2 Tablespoon
- Salt to taste
- Red chilly powder to taste
- Oil for shallow frying
Procedure :
- Mix boiled & grated potatoes, french beans, onion, sweet corn, carrot, (green, red & yellow) capsicum, green chilly, coriander leaves, salt, red chilly powder and 2 tablespoon bread crumbs.
- Make a smooth dough oh this mixture
- Now make a finger shape from this mixture.
- Make a cornflour mixture with 1/2 cup water dip your vegetable fingers in this cornflour mixture.
- Now transfer these vegetable fingers to bread crumbs, roll it nicely.
- Take a frying pan just add 1 tablespoon of oil, place your vegetable fingers in it, shallow fry it from both the sides.
- As it has nice brown color on both sides, serve it hot with your favorite sauce or chutney.
