Sooji Ka Halwa
This one dish is a simple delicacy that we had been enjoying since our childhood. We can't forget its association with almost all rituals. Everyone is having her own version of halwa, this is my version where I added saffron and little bit of milk to give more nutrients to my family. Ingredients :
- 1 Cup sooji (rava)
- 1/2 Cup Ghee
- 3/4 Cup sugar
- 1/2 teaspoon green cardamon powder
- Pinch of saffron dissolved in 1 tablespoon of milk
- 1/2 Cup milk
- 2 Cup water
- 1 Tablespoon raisins (kishmish)
- 1 Tablespoon chopped almonds
- 1 tablespoon musk melon seeds
Procedure :
- Soak saffron in a tablespoon of milk and keep aside
- Take thick bottomed pan add ghee to this and heat it. Now add sooji and keep stirring it over low flame till the sooji is properly roasted and you can feel a nice aroma. This needs time and patience, so do this step properly
- Once the sooji is done add raisins and almonds to this and roast it for a minute or two
- Mix 2 cup of water and 1/2 cup of milk together
- Add water mixture, saffron milk and cardamom powder to sooji and stir till it is cooked
- Now add sugar and cook it for three to four minutes
- Add a tablespoon of ghee it will give a nice texture to your halwa
- Serve hot and garnish it with musk melon seeds
