Roasted Pepper Pasta

Roasted Pepper Pasta

Pastas are all time favourite food, but it is a bit high on calories which is not good for health. So this one is a very light and simple pasta-dish with a delicious smoky flavour of bell peppers and fresh herbs .....


Preparation Time : 20 Min

Cooking Time : 10 Min

Ingredients :

  • 1 Red pepper
  • 1 Yellow pepper
  • 2 Onions thinly sliced
  • 2 Cup Pasta
  • 1 Tablespoon crushed garlic
  • 2 Tablespoon finely chopped fresh parsley
  • 2 Tablespoon chopped spring onion greens
  • Salt according to taste
  • Crushed black pepper according to taste
  • 1 Teaspoon oregano seasoning
  • 2 Tablespoon Olive Oil
  • For garnishing parmesan cheese (optional)
Procedure :
  • In a large pan add water, salt and few drops of olive oil and boil it. Now add Pasta to the boiling water and cook until the pasta is tender

  • Apply little bit of olive oil on bell peppers and grill it in a oven or toast it on gas until they are black and blistered from all sides



  • Once dome remove it from heat and leave it for 5 minutes. Now peel the peppers and cut them into quarters, remove the seeds and slice it into thin strips

  • Heat olive oil in a pan, add onions and cook over medium flame they are translucent. Stir occasionally and do not let the onions become brown

  • Now add crushed garlic and cook it for a minute or two. 

  • Now add peppers to this, mix gently, add 2 Tablespoon of water in which we cooked pasta. Add salt, black pepper, chopped parsley, spring onion greens and oregano seasoning


  • Add cooked pasta to this cook it for 3 to 4 minutes.


  • Served it hot, if you like cheese add parmesan before serving .....
